Why Lab Testing Exists (And Why It Works in Your Favor)
European food importers — whether they're selling under their own brand, supplying retailers, or formulating health products — carry full liability for what's on their shelves. If honey fails a quality check after import, they face returns, fines, or delisting.
So they test before they buy. Every time. Even from suppliers they've worked with for years.

The Four Tests That Matter Most
1. Moisture Content
What it measures: The percentage of water in your honey.

2. HMF (Hydroxymethylfurfural)
What it measures: A chemical compound that forms naturally when honey is heated or stored for too long. Low HMF means your honey is fresh and hasn't been overheated.
Why it matters: High HMF is a red flag for buyers. It usually signals that honey was heated to speed filtering, or that it's old stock being moved. It can also indicate adulteration with inverted sugar syrups.
What the number needs to be:
- EU legal maximum: 40 mg/kg
- For honey from tropical or warm-climate regions, the limit rises to 80 mg/kg — but Romanian, Bulgarian, and Turkish acacia honey is held to the 40 mg/kg standard
- Buyers sourcing for premium markets often want below 15–20 mg/kg
- Freshly harvested and properly stored honey typically comes in below 10 mg/kg
What to do: Keep processing temperatures low — ideally never above 40°C. Store in cool, dark conditions. Don't hold large volumes in warm rooms for months before sale. Ask your lab to test HMF as part of your standard Certificate of Analysis.

3. Pollen Count and Pollen Analysis
What it measures: The types and quantities of pollen grains present in your honey. This is how buyers verify botanical origin — that your "acacia honey" is actually predominantly from black locust (*Robinia pseudoacacia*) flowers.
Why it matters: Acacia honey commands a price premium over wildflower or mixed-blossom honey. Buyers are paying for that specific variety. Pollen analysis is how they confirm it.
What the number needs to be:
- Genuine acacia honey typically shows Robinia pseudoacacia pollen at 20–45% of total pollen count
- This sounds low, but acacia is naturally underrepresented in pollen analysis because the flower produces relatively little pollen compared to other species
- Reputable labs and experienced buyers understand this — a result of 20–30% Robinia pollen alongside complementary wildflower species is completely normal and authentic
- If a lab or buyer expects 80–90% Robinia pollen, they don't understand acacia honey — that's a signal to ask questions
What to do: Work with a lab that has experience with acacia honey specifically — not just generic honey analysis. Labs in Romania (like those accredited by RENAR) and specialized European food labs understand the Robinia pollen baseline. Keep records of your hive locations and bloom timing to support your origin claims.

4. Diastase Activity
What it measures: Enzyme activity in honey. Diastase (also called amylase) is a naturally occurring enzyme that degrades with heat and age. High diastase means fresh, unheated honey.
Why it matters: Like HMF, diastase is a freshness and processing indicator. Buyers use both together — low HMF *and* high diastase confirm that honey hasn't been overprocessed.
What the number needs to be:
- EU minimum: Diastase Number (DN) of 8 on the Schade scale
- Acacia honey naturally has lower diastase than darker honeys — this is normal and understood
- Exception: honey with very low HMF (below 15 mg/kg) may be accepted with DN as low as 3
- Aim for DN above 8 to stay clearly within standard; above 10 is comfortable

Getting a Certificate of Analysis: Practical Steps
- Find an accredited lab in your country. In Romania, look for RENAR-accredited labs. In Turkey, TÜBİTAK-affiliated food labs are recognized. In Bulgaria, the Bulgarian Accreditation Service (BAS) lists approved labs.
- Request a full honey panel — this typically covers moisture, HMF, diastase, sugars (fructose/glucose ratio), conductivity, and pollen analysis.
- Cost range: Expect €80–€180 for a full panel depending on the lab and country.
- Test each production batch separately, not just once per season. Buyers may ask for batch-specific CoA.
- Keep your reports. Buyers often ask for results from the last 1–3 batches, not just the current one.

One More Thing: Antibiotic and Pesticide Residue Screens
Many European buyers — especially those supplying retail chains or health food brands — now also require residue screening for antibiotics (like streptomycin and oxytetracycline) and pesticide traces.
